Marry Me Chicken (Dairy Free)

I have seen this viral recipe everywhere for over a year if not longer and I’ve always hesitated to make it because it was very dairy ingredient heavy. I think I was concerned about making my own dairy-free version because the dairy played such a large roll in the original.

This week I decided to just give it a try and see how it went. I was so pleasantly surprised! I have never tried the original sadly because of my lactose intolerance and my son’s dairy allergy. But I can say without a doubt this version of dish is amazing.

Both of my son’s loved it, which is few and far between. Usually, I only get a thumbs up from one or the other. Not only that, but this dish is incredibly easy and takes very little time to make. It’s perfect for a weeknight meal

Dairy Free Marry Me Chicken

Incredibly savory and comforting, this viral dish is reimagined in a dairy free version for those with allergies or lactose intolerance.

Ingredients

  • 4 Boneless skinless chicken breasts
  • 1/2 Box pasta (cooked according to package directions)
  • Olive oil
  • 3 Cloves garlic (minced)
  • 1/2 Cup Sun-dried tomatoes (diced into small pieces)
  • 1 Cup Coconut milk
  • 1/2 Cup Chicken broth
  • 1/2 Cup Vegan parmesan (we used Follow Your Heart brand)
  • 1 Teaspoon of Italian seasoning
  • 1 Teaspoon Chicken bouillon (optional)
  • Fresh basil
  • Salt and Pepper

Instructions

  1. Season both sides of chicken with salt and pepper. In pan, cook chicken on med high heat in olive oil until both sides are golden brown. Set chicken aside on separate plate.
  2. In the same pan, add garlic and cook until fragrant, then add all of the other ingredients except for the fresh basil (coconut milk, broth, parmesan, sun-dried tomatoes, Italian seasoning and bouillon). Once well combined, add chicken back into pan and simmer until chicken is cooked through. Serve over pasta and garnish with fresh basil.
